Jamaican Curry Shrimp


When you think of Caribbean recipes do you automatically think of HOT. FIRE…. It all doesn’t have to be that way.  With this dish in particular Curry Shrimp can be made to suit your own taste buds whether that means mild or pepper hot.  Personally I LOVE my food with lots of kick and fire but not everyone has an iron stomach like me, just try my Curry Chicken and see what I’m talking about. 😉

Jamaican Curry Shrimp

Ingredients

2 lbs Fresh Shrimp

2 tablespoons vegetable oil

2 Medium Onions, sliced

1/4 of a scotch bonnet pepper, finely chopped up

2 cloves garlic, chopped

1/2 sweet pepper, sliced

2 tablespoons Curry Powder

1 Tomato, chopped

Fresh Thyme

1/4 teaspoon salt

black pepper

1 1/2 cups water


Jamaican Curry Shrimp


Directions

Peel, de-vein, and wash shrimp.

Heat oil in a large pan or dutch pot.  Add the curry powder and continue to fry for two minutes. Then add the tomatoes, sweet peppers, onions, salt, pepper, garlic and thyme.  Sautée for 5-10 minutes.

Then add water, bring the water to a boil then reduce. Add shrimp.  You can add more thyme as well, I always do.   Heat and

simmer for 10 minutes or until shrimp is cooked.

Serve with white rice, veggies, and fried plantains.
