Nothing is worst than scorched chocolate, that’s why it is so important that you are careful when melting chocolate.  The most common ways to melt chocolate is using a double-boiler or placing the chocolate in the microwave.  Both of these ways are fine but they do require that you keep a close eye on each one of them.

The easiest method and one that I run to the majority of the time is heating the heavy cream or liquid that is requested in a small saucepan, then removing it from the stove and adding the chopped chocolate in to the saucepan.  The heated cream will melt the chocolate giving you a smooth and creamy mixture.  Stir when ready and use.
