Pancakes.

Can there ever be anything more splendid then a mountain of pancakes placed before you?

I think it stems back from my childhood, actually a lot has been stemming back from my childhood lately… but that’s a different story altogether.  I remember every Sunday as a child my family and I would always go to IHOP after church.  We would all walk in, all six of us, and we would always have to wait forever, (of course as a child anything more than 5 minutes feels like forever), and as we waited my mom would give me one of their menus, you know those really long menus, and I would have to share it with my younger siblings.  Now let me let you in on a little something, I am the oldest of four- in case you didn’t already know that.  I have 2 sisters (Aly and Chanel) and one brother (Sascha).  So even though I was always the one given the menu to look at, which always made me feel like a grownup… of course, I had to always share with the little ones.

We would all look through the menu and we would 9 out of the 10 times get the same exact thing.  Aly would get the French Toast, Sascha the Fried Eggs with bacon, Chanel the Scrambled Eggs, and I would always get the pancakes, but to be exact the Silver Dollar Pancakes.  You know those mini pancakes that come five together with scrambled eggs and a side of bacon.  Of course I would have to drown my pancakes in syrup, oh and trust me the drowning continues to this day.  My husband always looks at me like I’m crazy whenever I eat pancakes because he thinks I go way overboard with the syrup, and I just look at him with a mouth full of dripping pancakes and smile a BIG smile.  🙂 But that’s just me, I love pancakes with lots of syrup.

 


































I definitely think the trait has been passed down because my kids LOVE pancakes just as much as I do.  I truly think that a stack of pancakes can make anyone’s day a little brighter and a whole lot better.

Apple Galette with Caramel Sauce

I have never been a fan of apple pie.  I love apples, well I love red apples, but usually apple pies are made with green apples and I have never been a fan of them.  Whenever we would go out to dinner and there was apple pie on the menu my sister and I would get it to share just for the delicious flaky crusts and gooey center, but we would pick out the all the apples and give to our dad to eat. Hahaha, Weird huh….

Well I knew I wanted to make a go at baking an apple pie, but didn’t really want the pie so I decided on changing it up and making something even better… an Apple Galette.  But this Apple Galette is not just an ordinary Apple Galette it is drizzled with a caramel sauce, dusted with powdered sugar and then topped with vanilla ice cream… YUM!!!!!

Now, Yes you may be asking “Why are you making an apple galette during the summer when you should be making this dessert in the fall, well I am here to tell you you can eat this dish anytime of the year it is that good!

Keys to Making the Perfect Burgers

The keys to making the perfect hamburger is really simple.  You really need to first get some really pretty, (for some of you pretty wouldn’t describe meat… but you know when meat just has a pretty look to it), well I always like to go for ground beef with a 80%-20% fat to lean ratio.  Some like to combine ground chuck with ground sirloin, the only problem I find with sticking to only ground sirloin is that your burger will tend to become drier faster and we all know nothing is better than a really really juicy burger.  I always like to use ground chuck when I make my burgers.

Now when you have your ground beef never keep it in your fridge for more than two days.  So make sure that you are either going to make your burgers the day of within 2 days max.  I like to always work with 1/2- 2 pounds of ground chuck.

Summer fun with Browniesicles

This past weekend I was lucky enough to spend some time with my husbands family in Atlanta.  It was so good to get away for a little bit and just spend some quality time with those I hardly get to see.  While I was there my niece had her 6th birthday party and this year it was based on Judy Moody’s Not So Bummer Summer theme.  A great theme since kids are out of school and its summertime.  One of the yummy things that I helped my sister-in-law create for this shindig were Browniesicles.  Now if you guys follow me on Instagram (@thatssoyummy) you would of saw my snipits of the creating process… If not here they are…

These were such a huge hit that they were literally attacked the minute they hit the tables.  They were so adorable and so easy to make.  Now I used this lil cakesicle machine that my sis had and although it was easy to use you can also make these in a standard brownie pan, if you do not have this machine, and just cut in desired shape dip in melted chocolate and sprinkle on yummy treats.

Make sure you try these because they are yummilicious and perfect for may backyard summertime affair!

The kids are out of school and summer is finally here!!!! WOOHOO!!!!!!!  Sorry I couldn’t contain my excitement any longer.  It’s this time of year where I love to spend as much of my time running around outside with kids going to he pool, beach and hanging by the park.  It’s also one of my favorite times grilling…

I always love to kick off our summer break with a grill fest.  This year we wanted to kick it up a notch and make something real yummy.  We decided on making some Asian Barbecue Chicken.  Now you know that there is nothing sweeter then some yummy bbq but when you pair it up with some Asian seasonings it tops it off, right.  This recipe is so easy and so delish, I paired it with some Stir-Fried Noodles.

Stir-Fried Noodles with Vegetables

Buying Chinese food for dinner is such a common thing and is pretty much done by families worldwide.  It’s so easy to just call your favorite nearby Chinese restaurant and order delivery when you are trying to get kids home after school, homework finished, and dinner on the table before 8:00 at night.  I know that one of our favorite things to get are stir fried noodles.  Mmmm Mmmm noodles…. so yummy!

I think some people feel that cooking true Chinese recipes takes so much time but truly its one of the easiest fastest things to cook.  Making these noodles is not only fast and delicious but such a great way to save money.  The best part of making these noodles is not only that it takes 30 minutes or less to make but that it also uses either fresh or frozen veggies… and you can add rotisserie chicken from the night before.

Banana bread was the first recipe my grandmother ever taught me as a child.  I remember standing in the kitchen watching her and I would always be amazed how she threw all her ingredients together the wonderful outcome that would come out of the oven.  The smells that the house would turn into while the banana bread was cooking brings me back to my childhood.  I knew that this would be the perfect recipe to teach my daughter and one that I know that she will carry on as she grows up and teach her own children one day.

Chicken Fajita Recipe

What can I say I LOVE Mexican food.  My family and I eat a lot of Mexican food especially Chicken Fajitas.  They are so easy to make and they are perfect with my Refried beans and Yellow rice.  This recipe is made with such an easy fajita spice mix it takes no time to make any day of the week.  I love the fact that you can season this the night before or make the day of.  Especially when you add caramelized onions, bright colored peppers and fabulous add-ins.  Just warm up your tortillas in the microwave or oven, add shredded cheddar cheese lots of lettuce and tomatoes and spicy salsa and pico de gallo… YUMMY!!!!!
