Red Velvet Brownie Bites

26 Dec 2011 In: Recipes

I have an obsession with red velvet cake, cupcakes, sandwich cookies… actually with anything red velvet to tell you the truth.  I don’t really know what it is but I always love a really good red velvet recipe, especially when it combines my other love brownies. 😀

These silky red velvet brownies, are layered with a sweet homemade cream cheese frosting.  Not only are these brownies soft and chewy but have a beautiful deep red color that makes them a real beauty.  These are the perfect bite-sized dessert o have for any party, especially with New Years Eve coming up.  Sprinkle some edible white glitter for some extra sparkle and these would go great for your party and a great ending for 2011.

Double Chocolate Chip Pancakes

10 Dec 2011 In: Recipes

Morning pancake cravings always lead me to making batches and batches of scrumptious fluffy pancakes, drizzled with warm maple syrup.  Especially when that craving is combined with a sweet tooth then chocolate is always thrown in.  Combining cocoa powder, buttermilk, and chocolate chips are the sure answer to any morning breakfast craving…. and these definitely made the cut!

Especially since I love pancakes or pretty much anything sweet for breakfast… You do know breakfast is the most important meal of the day.. (wink, wink, nudge, nudge).

Don’t judge me… Okay! 😛

Enjoy… and let me know what you think!

White Chocolate Candy Corn Cake Bars

29 Oct 2011 In: Recipes

Halloween is coming up and I am always experimenting with different sweet treats to make for my trick-or-treaters.  Of course it is always great when I am able to incorporate halloween candy inside of the treats… for some reason my kiddies go bonkers over that. Of course for me I’m not really a candy freak like the rest of them but I do love my sweets so I guess thats why this recipe was perfect because it pleased all of us. 🙂

I used Jenny from Picky Palates, White Chocolate Cake Bars recipe and added some candy corns into it.  It definitely was delish and great for Halloween spirit.  If you want to whip up a batch of these for Monday then trust me you will have trick-or-treaters coming from across town.

Enjoy and Happy Hallows Eve!!!!!

Sweet Potato Casserole

27 Oct 2011 In: Recipes

I never used to like sweet potatoes while growing up.  I don’t really know why I never liked them, maybe it was because it always felt really mushy in my mouth.  I remember sweet potatoes were only made during Thanksgiving in our house and they never had marshmallows on them, either so I think that was definitely a big no-no especially when kids are involved… 🙂  As an adult it has only been recently were I have done a 360 and started to love sweet potatoes now, especially when they are topped with marshmallows and a brown sugar crumble.

These sweet potatoes are not only made baked first then combined with milk, eggs, salt and sugar but also topped with a brown sugar crumble and sweet little marshmallows.

They are my son’s favorite and hope they will be yours also!

Chocolate Chip Cookie Fudge Bars

24 Oct 2011 In: Recipes

Are you looking for a decadent over the top chocolate chip cookie recipe… then I’m you’re gal.  I found this unbelievable recipe that combines not only chocolate chip oatmeal cookies but also a really easy chocolate fudge filling.

That’s right… three layers of absolute yummiliciousness… (HA… I made a new word, :-)).  I found this recipe from Lori at Recipe girl again, love her and all her yumminess, and knew I needed to try them.  Now some may say that these are too sweet but you know what that makes it even better! 😉

The best part about these is that they are really really easy to make, just make your basic chocolate chip oatmeal cookie dough and a chocolate fudge that only uses three ingredients, chocolate chips, condensed milk and vanilla extract.   Layer one after the other pop in the oven and then you smell how wonderful your kitchen will get… just be prepared to be attached when these babies come out of the oven, I think I literally had to hold my daughter back from jumping them and gobbling them up. 🙂

Just make sure you have a tall glass of milk or a nice cup of hot chocolate…Mmmmmmm!

Enjoy…

What is it about homemade spaghetti and meatballs that just warms my heart and makes me feel all cozy inside?  Maybe it’s because it is such a comforting dish, especially when you have your special spaghetti sauce simmering in a large pot on the stove all day and the house smells like a delicious Italian restaurant. 🙂

Making homemade spaghetti sauce does take some time especially since the sauce must simmer for a few hours, but is so worth it when your all done.  My kids love meatballs, especially big juicy ones full of flavor.  When I stumbled across a friend of mines site, Angie from Eclectic Recipes, who also writes for the Family Kitchen, my drooling could not be contained.  I absolutely loved the stuffing of fresh mozzarella inside each meatball, who wouldn’t be excited with cheese oozing out.

I truly hope you make this on a long weekend day and enjoy this delicious spaghetti recipe, its a real crowd pleaser.
