S'more Granola Bars


Good Morning (in a soft low voice)…

(Clears throat) Ahem… I said GOOD MORNING!!!!

Ok, That’s much better.  It’s Monday Morning and I am fired up and ready to tackle my week ahead.  Last week was kinda overwhelming for me, see I wasn’t feeling well at all,  I think I caught one of the nasties my son brought home from school… of course.  So you know when your subjected to carrying the kiddies off to all of their after-school activities when not feeling 100% its never a good thing.  Compounded with my own activities, a big catering I had to get ready for, getting my house in order helping out with the kids PTA, and oh yea trying to remember to breathe, a minor detail I seem to forget at times. whew! I’m outta breathe just remembering the past week.

But never mind me complaining, tis a new day with bright things ahead.  Like right now I have something that will just completely brighten up your day… S’more Granola Bars.  I know, can you believe it… Marshmallows, Chocolate Chips, and Graham Crackers all mixed together to form delicious, gooey, sweet and fabulous granola bars… pretty cool!


Well I like to kinda jump start your week off right and I couldn’t think of a better way to do it then introducing you to these babies—stop drooling, no really stop your screen is soaked right now! 🙂

Panko Crusted Chicken Legs


Mmmm, Mmmmm, Good!  That’s all I have to say when it comes to these tasty Panko Crusted Chicken Legs.  I love cooking Panko Crumbs.  If you have not been schooled in what Panko Crumbs are let me be your teacher, Panko is the Japanese word for “bread crumbs.” Panko Crumbs are the Japanese version of bread crumbs, and they tend to be lighter, crispier, and crunchier than Western bread crumbs.  They are fabulous when breading crab cakes, potato cakes, and especially chicken and/or chicken legs.

Rosemary Pork Chops

Rosemary Pork Chops


Pork chops are a tricky thing to cook sometimes.  They have a tendency if cooked too long to become hard and chewy.  Any of those two are never a good combination.  I found that marinating them in a simple marinade of rosemary,  olive oil, and garlic not only saturates the meat but gives it a great flavor as well.

These pork chops are so easy to make and come out of the oven, tender and juicy.  The best addition for this recipe is a side of Alfredo pasta. YUM!

Sausage, Egg and Cheese Casserole


There’s a tradition that is done for all of the teachers at my chidren’s school called “Back to School Breakfast for the Teachers.” This is where the PTA volunteers bring in or make different breakfast items for all of the teachers to start off the year.

Now, I know we are three weeks back into school and if you have visited ThatsSoYummy before you also know that not only did I make this delicious Sausage, Egg and Cheese Casserole you see before your eyes, but I also made Doughnut Muffins, and a Hash Brown Casserole.

Let’s just say that this dish was an AMAZING hit with not only the teachers but with the PTA volunteers as well!

I have to admit, I have never really been a big fan of salmon.  Don’t get me wrong I love fish especially if its red snapper or sea bass.  Mmmmm Mmmmm those are fabulous.  Now my parents they are a completely different story, they just LOVE salmon.  Me on the other hand not so much…

I make it every now and again, but I really have to feel for it to eat it.  This past grocery shopping trip, it called to me for some strange reason, salmon that is.  I had been thinking of different ways to cook it and I decided to try a Honey-Soy glazed recipe.  Let’s just say that after I made this recipe, I was hooked and I think it just maybe my favorite salmon recipe to date!

Brown Stew Chicken

Brown Stew Chicken


Jamaican brown stew chicken is a sweet, tangy, sticky caribbean chicken recipe that is made all the time in Jamaican homes. I had always wanted to learn how to make this dish so I sweetened up my uncle to teach me.  It was so easy, I find that I make it for my family all the time.  The best thing when making this recipe is to soak the chicken overnight in a chinese mushroom soy sauce, this will give the chicken time to saturate itself with all the flavor.  Some people like to add tomatoes and potatoes to the mix, but I opt for those out and just have the chicken and spinners, which are little boiled dumplings.

Like I mentioned before this chicken takes absolutely no time to make, just serve it with rice, plantains, or hard bread.  If chicken is on the menu for dinner tonight take a chance and make this chicken recipe, I promise you won’t be disappointed!

Potato Cakes


Do you have a favorite dish to make with leftover mashed potatoes?  I do, and you wanna know what there called, potatoes cakes. The first time I had ever tried a potato cake was when i was visiting family in Atlanta and my sister-in-law made them for me, they were delicious and I knew I needed to make them for myself.  It just so happened that I had left over mashed potatoes from the other night and some spinach I was planning on making for dinner and threw it all together.  Add shredded cheddar cheese, egg and panko crumbs.  Pan fry them and voila, crispy Potato Cakes with a cheesy interior.

I even had my sister try them and she loved them!

Belgian Buttermilk Waffles

Lately I find myself being obsessed with waffles… all kinds every kind.  Maybe its the golden brown color, crispy edging on the outside with the fluffy soft center that drives me wild for them but whatever it is, I’m loving it!  One day as I was searching for waffle recipes, I came across this Belgian Buttermilk Waffles, and I started drooling…. 🙂 Even though traditional belgian waffles are made with yeast these waffles are made with baking powder, and you can’t beat buttermilk.

Homemade waffles are a sure way to start or end your busy work week, whether you make them for a traditional breakfast and have them drenched in maple syrup, or you can jazz them up and have them for lunch, dinner, or even dessert!  Whatever way you decide to make these waffles just enjoy them as much as I did!

Doughnut Muffins

Doughnut Muffins


Did you ever wonder if it was possible to eat doughnuts without the hassle of deep-frying? They may look like muffins but they are really doughnuts shaped and made as if they were muffins… Pretty ingenious, right!

Especially when they come right out of the oven hot and fresh and you roll them in melted butter and then in cinnamon sugar, mmmmmm.  I call them little “Pillows Of Heaven!” 🙂

I especially made them for my kids “Back to Teachers Breakfast” for all the teachers going back to school this past week… and YES they enjoyed them as well!
