I would like to take the time this morning to wish all of the mothers, grandmothers, aunts, cousins, and friends a Wonderful Blessed Mother’s Day!  I grew up being taught it takes a village to raise children and I am so grateful for the women who have been in mine.

To my own Mother, I would like to thank you for all that you have taught me and for showing me the path on how to be the mother I always wanted to be.  To my husband thank you for your love and for the two beautiful children we have.  To my darling pumpkin and princess, thank you for all the joy you bring into my life… everyday is an adventure and I am so happy to be your Mommy!

Easy Chocolate Croissants

Looking for something easy, delicious and extra special to make for your mother or wife this Mother’s Day!  I know for Mother’s Day it is one of the days I can actually guarantee there will be no questions of  “Mommy what are we eating?” or “Mommy what are you cooking?”  There’s just mommy getting to sleep in and have some breakfast or whatever delicious treat my husband and children want to surprise me with.

With this simple easy recipe all you need to do is purchase fresh right out the oven croissants add nutella, white chocolate, and mini chocolate chips.

Cinco de Mayo Yummy Bites

Are you looking for South of the border bites you can nibble on today to ring in Cinco de Mayo… well if you are anything like me you love some Mexican food and if a day like today comes aroud where you can just eat it all day…. then your in heaven.  I don’t know what it is but ever since I lived in Atlanta I fell in love with Mexican dishes.

There was this one restaurant where my husband and I would go to that a friend of ours owns called Tijuana Joes….. Mmmm Mmmm Mmmmm, every Cinco de Mayo we would go in there and eat to our hearts content. Just thnking about it is making me hungry, and it’s only 8:05am… I think I have a problem… 🙂

But if your feeling like you don;t really wanna go out and eat then why don’t you bring Mexico to you by creating some delicious recipes right in your own kitchen.

Whole Wheat Lasagna Roll-ups

Do you ever find yourself with a hankering for lasagna but just don’t feel like making such a large amount… I do sometimes.  Thats when I knew lasagna roll-ups would be the perfect way to satisfy my so-called lasagna craving.  The best part about this recipe is that you can eat them individually or freeze for a later date.

I used whole wheat lasagna noodles combined with ground beef, mixtures of cheeses and homemade tomato sauce…. It was DELICIOUS!!! Even the kids ate them all up… and you and I both know if that happens then its a WINNER! 😉

Great American Bake Sale

It’s Wedenesday and although the weekend is over I have been re-cooperating from all of the baking I did last week for Share Our Strength’s Great American Bake Sale we had this past Saturday.  If you all haven’t already heard all about it then here’s a brief update, food bloggers nationwide banned together to be part of the The Great American Bake Sale Challenge, in their different cities and hosted bake sales filled with delectable goodies.  All of the proceeds we received were then sent to Share Our strength to help in the ending of childhood hunger.

    Simple Tomato Sauce

    There is something about a homemade tomato sauce that just warms my heart.  Walking into the kitchen with a nice pot of tomato sauce simmering is one of the best smells I know of.  Making tomato sauce from scratch makes me feel like I am connecting with simple fresh ingredients and the result is breathtaking.  With this easy simple sauce you can pair with anything from pizza, pasta, fish and chicken.  All you do is sautee onions, carrots, garlic, and celery in a little olive oil.  Then add the herbs and tomatoes.

    Quesadillas de Camarones

    What is it about quesadillas that just make you want to eat one after the after the other… there coming in like a bag of chips… Just can’t top at one!

    I love quesadillas especially with cheesy centers filled with peppers and onions and shrimp.  These quesadillas are packed with sauteed green and red peppers, onions, shrimp in mexican sauce, and mexican cheese.  Once you have one of these babies you won’t ever feel like going out to get quesadillas anymore.  I found this delicious recipe on Ree’s site.  If you don’t know who Ree is then you need to pull your head out of the sand and check out her site, The Pioneer Woman.

    So next time you get a hunkering for cheesy full of flavor quesadillas then try these at home… I promise you won’t be disappointed! 🙂
