My kids were out of school for spring break this past week and even though they went out of town with my husband to sunny Miami knew I wanted to make something special for their return home breakfast… that’s when I knew Chocolate Pancakes were it! These babies were gobbled up in seconds and enjoyed by all…

The good thing about these pancakes are that they are not entirely sweet by themselves… but when powdered sugars dusted on top and maple syrup is poured on top its sweetest pancake ever can be.

Cheese Tortellini with Peas and Blackened Chicken

My children have a thing for homemade alfredo sauce especially when its combined with cheese tortellini pasta.  They just go nuts for it.  So when I asked my kiddies what they wanted to eat for dinner the other night they jumped and said Cheese Tortellini with Backened Chicken… of course I had to throw in some peas beacues they always need their veggies. HeHeHe 😀

Homemade Alfredo sauce completely sets this dish from others.  Not only is it quick and easy to make but simple and delicious as well.  A satisfying sauce that can be paired with any pasta… once you make this sauce you won’t buy store bought any more.

Tuna Melt Panini

Tuna Panini

So I think I can totally say that I am completely and utterly addicted to my Panini Maker.  My husband surprised me with one the other day because he knew how much I wanted one.  So I have been thinking of all the delicious things I can make with it.

One of the first things I knew I needed to make with my panini maker was my favorite Tuna Melt.  It is soooooooooo good!  I add spinach, swiss cheese, a garlic and herb spread that just complements it and last but not least scotch bonnet sauce.  Yes! I love hot sauce as well… 😛

Buttermilk Pancakes

Nothing beats starting the morning of with the tastiest, lightest, fluffiest piping hot buttermilk pancakes for breakfast.  These spongey babies are wonderfully think but yet still light with a hint of tanginess that is offset with its sweet flavor.  The best thing about these pancakes is that they are so easy to make at home and definitely taste better than anything you’ll find out of a box.  SO gather up all your ingredients and start whisking away…. you can even double, triple, quadruple the recipe… that simple!

Green Velvet Cake with Cream Cheese Frosting

















I made this delicious easy cake in honor of Saint Patrick’s Day.  Let’s just say that it was a huge success with the kids and their friends.  They thought it was so cool to see a cake that was green.

You would make it the same exact way you would a Red Velvet Cake just substitute the red coloring for the green one.  That easy!

So if your feeling a little green just bake this baby and you’ll feel much better… especially when its completely covered in cream cheese frosting! YUMMMMMMM 🙂

Chinese Chicken and Broccoli


This is a perfect simple dish that can be made any time of the day.  I don’t know about you but I am always looking for new ways to incorporate veggies into my dishes especially for my kids.  This is one that was definitely a pleaser all the way around.  For a great way to incorporate broccoli into your weekly meals, this dish provides not only juicy succulent chicken but also fresh vibrant cuts of broccoli that lightens up any main course.  All that is needed left is steamed white rice or even brown rice would be great.

The best part its healthy for you as well, especially if your like me and have been on a Ten in 10 week Healthy Challenge.

Did you know that Blondies are so simple and easy to make.  It literally only takes one bowl and ad a few ingredients and the end result is a delicious brown sugar concoction full of sweet gooeyness.  These blondies not only are chewy, rich and flavorful but they also contain chocolate chips in every bite.

So if you are in a bind and in need of a fabulous brownie recipe but are not looking for chocolate overkill then this is just for you.  Just add a tall glass of milk with them. 🙂
