Tilapia with Tomatoes and Onions

This week has been a whirlwind of a week.  With so much that is going on I have felt all over the place… literally!  Going on with Ten in 10 Healthy Challenge I am proud to say that 5 weeks have been completed and I am half way done.  Within those 5 weeks I am so excited and proud of myself to say that I have lost 18.5 pounds and feel incredible.

When I walked on the scale and saw what I had lost I did a double check and was amazed.  I guess all of that working out and eating healthy really does pay off. 😉

One thing that I did try this week was my sweetheart of a friend, Paula from Bell’Alimento‘s, Tilapia with Tomatoes and Onion recipe.  It is so healthy and delicious I just knew I had to try it out and share it with all of you.

Chocolate Chip Waffles

Growing up we are always told that breakfast is the most important meal of the day.  Of course there are some that find that sitting down and eating so early in the morning is a waste of time.  These people clearly have never had the luxury of waking up to homemade Chocolate Chip Waffles topped with freshly sliced strawberries and whipped cream wafting the entire house.

Although some days are tougher than others it is always great to at least try and enjoy a nice relaxing breakfast with the family where no rushing or speeding out the door is necessary.

Trust me… after these delicious waffles are prepared you may just find yourself staying home and cozying up on that big plush sofa of yours with a good book.

Easy Bake Oven Nostalgia

Did you ever own an Easy Bake Oven when you were a child?

I know I had always wanted one and for some reason I never got on when I was younger.

I guess when I baked with parents I always just assisted them in the kitchen.

So when my daughter received one for Christmas this past year I was so excited to share with her what it feels like to bake something from scratch and see the end result.  She was completely ecstatic, especially after I explained to her that it was her very OWN oven.

She looked at me with her big brown eyes and asked “Now I can bake like you mommy?”

I looked at her with tears in my eyes, (I know I’m a real sap) and said “Yes, baby just like mommy!”

Here are a few pictures of my princess baking her very first Easy Bake Oven cake with chocolate frosting and sprinkles. 😉

Super Bowl Chili Recipe

Chili Recipe


So the playoffs are done and everyone is gearing up for one of the biggest nights… Super Bowl Sunday!  There’s something about a nice big bowl of chili that just brightens your day.  Maybe its the aroma of chipotle and chili pepper combined with onions, garlic, tomatoes and ground beef that lures you in.  All I know is that no matter what the occasion be it big or small, chili is definitely a comfort food in my book.  Just serve it with rice, cornbread or even nachos…. YUM!!!!

Pioneer Woman’s Chile Con Queso

I don’t know about you but I love me some real good queso dip…. Especially when the cheese is piping hot and dripping all over the place.  To me thats the best kind. 🙂  So you know when I found Pioneer Woman‘s Recipe for Chile Con Queso I jut had to stick my finger in it. How could you not with ground beef, velvetta cheese, Rotel (which is just diced tomatoes and chilies), extra green chilies, and sauteed onions.  I probably lost you when I said Velvetta… Right?!?  You can never go wrong with Velvetta!

I am so happy I did because it was so good the bowls were being licked right after.

I know… what scavengers!

Ten in 10: Week 3 Update

Can you believe that January is almost done!  Thats right… It’s feeling a little surreal, when just the other day it was New Years and we were celebrating and making our new years resolutions.  If you have all been following me on twitter (which by the way is a must @thatssoyummy :-)) then you already know I am knee deep in my Ten in 2010 Healthy Challenge.

Week three has officially been completed and just like the other day I am proud to say that I have lost 11 pounds…… WOOHOOO!!!!!!

I have completely changed my lifestyle… I workout everyday for at least 1 hour and a half most two; I I eat a protein shake after each workout, I have been drinking water, water, and more water; and last but not least I have been eating salads, brown rice, and protein.

This is a great recipe I found for Brown Rice and Black Beans (see below)

or you can try a Mediterranean Salmon Pasta Bowl (just substitute and add whole wheat linguine)

The biggest thing for me was stopping the late night snacking, which I guess is pretty much everyday snacking… breads, juices, soda, COFFEE (which by the way I miss you so much!) and desserts.

and especially not these Caramel Chocolate Fudge Brownies.

So the fight continues, 3 weeks down 7 more to go….. Let’s pray that I stay strong for the remainder, which I think I just may! 🙂

Brown Rice and Black Beans

Brown RIce with Black Beans and Corn

If you all know then your fully aware of the challenge I have embarked on with Lori from Recipe Girl, Ten in 2010.  Well I am proud to say that it has been two weeks and 3 days and I have lost 11 pounds.  I know pretty crazy.  I told myself that a new year meant a whole new Tasha.  I can officially say that i feel better everyday.

Kinda crazy… I know!  Especially since if you all know me you know how much I LOVE food!  Now don’t get me wrong I am still cooking and baking up a storm in my kitchen, come one now I have a family to feed. 😛  I am just eating better for myself.

When I came across this recipe Brown Rice and Black Beans I knew I had to try it.  So for all of you who can’t let go of the rice element then try Brown rice.

It’s a great alternative… I promise!
