Do you ever get frustrated when looking for a recipe in a cookbook but can’t ever find it? Or you think that a particular recipe is in a particular cookbook but end up being wrong?  Or do you completely live on the internet and find that you haven’t even opened up one of the many cookbooks lying on your shelf?

Well if you are the techsavvy person I think you may be then boy do I have a treat for you, what if it was possible for you to be able to see all of your favorite cookbooks online, just like a virtual bookshelf, where all the cookbooks were searchable and cross-referenced by ingredient and keywords.

Lift Up Your Hearts and Prayers For Haiti

Who would ever of thought that one of the poorest caribbean islands in the world would be in complete chaos this week.  Haiti, my little beautiful Haiti has been a victim of one of the world’s worst earthquakes in time.  If you have been watching the news and surfing the internet you are all aware how this tragedy has destroyed Haiti, how families upon families have lost loved ones, how children have been taken away, and homes have been completely turned to ruble.  I sit here with my head in my hands shaking back and forth asking myself “How?” “Why?”

Although I do not talk about Haiti as much, my heart and love still resides there just like it does for Jamaica.  Even though I have not traveled to Haiti in almost 18 years I have always wanted to take my children to visit one day and show them a part of their culture and where part of their mother spent summers and where their grandfather grew up.  From the moment I was told what happened my heart sank and needed to contact my family that still live there.

For days so many could not get word of who was hurt, taken away, or even living still.  Talking to whom ever we could to see if friends and family were safe, unfortunately some were not.  As I wipe the tears away and pray for all of the ones that were taken away from the world so early I pray for my Haiti.  I pray that people will find it in their hearts to give as much as possible to all of the wonderful non-profit orgnizations that are coming together to help.

Green Onion Biscuits

Do you know the beauty about biscuits is that you can pretty much add whatever you want to it, inside of it, or on top of it.  The possibilities are endless and the ending results are delicious.  Especially these melt in your mouth biscuits that are combined  with a garlic and herb cheese blend (I used Boursin), green onions, Parmesan cheese, and biscuits.

They are so easy to make, in 15 minutes you can have fresh savory biscuits right out of the oven.

Mediterranean Salmon Pasta Bowl

This delicious combination of salmon, fettucini noodles, baby spinach, and balsamic vinaigrette is the perfect anytime dish. Especially if you are looking to not only add variety to your menu but also nutrition.  I made this pasta bowl for Christmas Eve dinner and I knew I had to make it again, especially with my Ten in 2010 Healthy Challenge going on.

Twice-Baked Potatoes

















I don’t know about you but the first time I ever tried twice-baked potatoes I fell in love.  I don’t know what it was but I just thought it was a perfect idea for a side dish.  When I started researching and thinking about all of the different add-ins you could incorporate in side the ideas were endless.  That’s when I knew I needed to make some for my family. These little beauties are stuffed with sour cream, butter, and cheese, not just any cheese but Parmigiano-Reggiano.  But wait there’s a secret ingredient that separates these from other twice-baked potatoes… a dash of balsamic vinegar.  These potatoes are not only filling but contains a sweet-tangy flavor.

Ten in 2010 Healthy Challenge

So 2009 has come and gone, and 2010 is here before our eyes.  This is the time when folks all around vow to make healthy New Years resolutions.  I know because I used to be one of those people who vowed that each year I would eat heathy and exercise.  The difference this year is that I vowed that I would start before the year ended and continue strong when 2010 began…. and that is what I have done.

A fellow food blogger, Lori from Recipe Girl decided the same thing and has organized a Ten in 2010 Healthy Challenge.  The challenge will begin, today January 2nd and will continue for 10 weeks.  The best part about it is that yours truly will be participating and you can too!  To jump start my goal, I joined my whole family at my local YMCA, not only is it for m e but for them as well.  A family that works out together feels better together. 😉 I am proud to say that I have been going everyday for the past two weeks and love it.. with that as well I am eating heathier, drinking plenty of water and cutting down on the sweets.

My goals for this challenge are:

  • Drink plenty more water
  • Eat more veggies and fruits
  • No more COKE or soda like products
  • No more sweets (this will be a hard one)
  • Workout everyday, giving myself Sunday possibly a break
  • Sleep at least 6 hours a night
  • Prepare healthy delicious meals for my family
  • Cleanse my body of all the nasty toxins I have accumulated over the years

Of course that doesn’t mean I will deprive all of my fabulous readers of the delectable yummies I make and share with you all because that would just be unfair.  I will just also be sharing more healthy and delicious recipes as well throughout my challenge.
