What Is Quinoa?

Though quinoa is not a grain, but the seed of a leafy plant related to spinach, it can be technically substituted for nearly any grain when cooking.  It is cultivated in South America and revered by the ancient aztecs as as a source of energy for their fearless warriors.

According to The National Academy of Sciences, quinoa is “one of the best sources of protein in the vegetable kingdom”.  Quinoa is a great food for people who follow wheat-free/gluten-free diets because it does not contain gluten.

Quinoa is 100% whole grain and is filled with rich amounts of protein, iron, potassium 9 essential amino acids, and other vitamins and minerals.  Quinoa contains the amino acid lysine which helps the body produce protein.  Quinoa is admired by cooks, and chefs all over by its creamy texture and mild nutty smoky flavor and is less filling than other grains and pastas.

I know I am a victim of pretty much all of these sweet, rich, and foamy drinks from Lattés, Cappuccino’s, Cafe au Laits and my all time favorite Machiattos…. Caramel Machiattos to be exact. 😉

I know that it may be confusing for those that do not drink any of these all the time to know which ones are which.  So here are the differences.

• Café au Lait – This drink is simply half brewed coffee and half warmed milk. You can avoid the milk or add a little but the idea is thinning the strong coffee with a generous amount of warm, creamy milk.

Hmmmmmmmmm………

Let’s think about it.

There are a few things that I am excited for this fall, like the change of weather, though living in Orlando it is pretty HOT here still, so I’m waiting for it to cool down a little.

But the ultimate thing that I cannot wait for is Thanksgiving and all that comes with it, pumpkins, fall colors, cool weather, turkey, stuffing, apple pies, candied apples, the smell of cinnamon and nutmeg in every turn!!!! Heavenly!!!!

If you haven’t realized it, Thanksgiving is my most favorite holiday! 🙂

What Fall Foods are you so excited for you cannot wait??????
