Rice is such a staple with Mexican dishes.  We love eating Mexican food at home.  When I was pregnant with KK that’s all I ate was Mexican food.  I think I ate more quesadillas and fajitas during that time then in my whole life.  To this day Mexican is one of my favorite cuisines.

S’mores have got to be the quintessential dessert that screams summer. There’s just something about gathering around a campfire roasting marshmallows, telling stories, and making s’mores that just brings a smile to my face.

I can remember the first time I ever made s’mores at a campfire, it was at camp.  I was 8 years old in Miami and we did a campfire in the late afternoon.

That was so much fun….

Now in these parts summer is soon coming to a close with just two weeks left before the homework, projects, and running around begins…who am I kidding the running around is already beginning this week…

Do you ever have those morning where you wake up and think to yourself “What am I going to make for breakfast this morning?”

Even though it’s summer time my husband and I really don’t have a lot of time to spend with the kids in the mornings so when the weekend rolls around I always try and make something special and quite yummy.  Pancakes are one of the many favorites in our house and I love making Buttermilk Pancakes.

Except that when I woke up I remembered oh yea that buttermilk is going to be used for a different recipe.  Of course I didn’t feel like running to the store to buy some so I made an alternative… these Chocolate Chip Sour Cream Pancakes.

Hello Beautiful!

I’m feeling a little emotional today.  It’s my oldest’s birthday.  That’s right Julian is 13 today.  I can officially say I have a TEENAGER!!!!

Holy %$#&!!!!!  

Where did the time go??? I know I just had to say it.  I think I’m still a little in shock.  You see in the past year so many changes have happened that it still has my head spinning.  First of all we added an addition to our family Jacob, our youngest, who is 16 months, Kayla is in double digits now, the BIG 10, and then we turn to Juju… my Pumpkin… my first born.

In the past year this little boy has completed skyrocketed past me.  There was a time when he was smaller than me or right at the edge.  I mean I know I’m not the tallest of the bunch, with my 5 ft 2 inch self, but come on…. this boy sprouted like a weed and is now practically 5 ft 11 inches. I know!

I find myself just staring at him–watching him, wondering what he’s thinking.  You know boys, they get to the point in their life where they think they know everything and that there mom is just annoying… I guess and that they have selective hearing.

For all those mom and dads who know that I’m talking please raise your hand!!!!

What is it about french toast sticks that make you feel like a kid again? Maybe it’s the dunking part… I don’t know why it is exactly, but all I know is that when I make these crunchy sweet, full of cinnamon sugar french toast sticks I feel like I’m eight years old again when my mom would warm up those frozen french toasts sticks we would buy in the supermarket.

These Cinnamon Sugar French Toast Sticks are one of my daughter’s favorite breakfast treats.  Just imagine thick slices of Texas toast dipped in an vanilla-sugar egg mixture, then pan fried until crisp and caramelized, but still keeping the inside soft and fluffy.  

After cooking they are immediately tossed in cinnamon and sugar while they are still hot.   French toast sticks that melt in your mouth really!!!! Read the rest of this entry »

There is something so sinful and ultimately decadent with this dessert that after one bite you find yourself eating another and another.  Oreo Cheesecake Bars, just saying the name makes my mouth water.  (cute huh!)

Combining my two loves Oreos, which if you have been reading this little blog of mine you already know has been a favorite of mine since he beginning of time, and cheesecake.  Luscious, creamy cheesecake!

What are S’mOreos you may ask???

Well, they are just Oreos® + chocolate bar + a big marshmallow = YUMMINESS!!!

I have never been a huge fan of smores… I mean I like them and I love chocolate but I have to really be in the mood for them.  Now Oreos®, that’s a completely different story.  I’m a nut for Oreos®!

My kids they absolutely LOVE smores.  I actually don’t believe there is a dessert that they wouldn’t eat… HA!  They get that from their momma 🙂

Every year if your like my husband and children you wait impatiently for the month of February to roll by because of one thing and one thing only… GIRL SCOUT COOKIE SEASON!!!!

I mean its every where you turn little adorable girl scouts asking you to buy some scumpdiliumptious cookies that you know you can only once a year.  I mean I know people who buy tons of boxes and store them in their freezer so they can have them for later in the year.

It’s crazy! 🙂  But a GREAT crazy!!!!

Do you think if you wrap anything in bacon it would taste good???

I mean we’ve tried it with Bacon wrapped BBQ Chicken, Bacon & Cheese Pull-Apart Bread, Chicken Stuffed with Bacon, Feta & Spinach, and of course Brown Sugar Bacon Waffles.

I think so… I mean who doesn’t love tater tots?  Brown sugar? and bacon???

These little bite size appetizers are so addicting once you pop one in your mouth 5 minutes later you will see half the bowl finished.

All it is are tater tots wrapped with a small piece of cheese, then wrapped in BACON and rolled in brown sugar…. YUM! Read the rest of this entry »
