Hot Tip: Freezing Leftover Buttermilk

Do you ever find yourself with extra buttermilk after what you needed to make milk chocolate buttermilk pancakes or buttermilk biscuits.  

If you run into this problem like I do then here is a solution I bet you didn’t know.  Just freeze it!

You can separate the buttermilk in one tablespoon measurements in ice cube trays and place it in the freezer.  

When you are in need of buttermilk all you need to do is take out as much as you need and place it in the refrigerator overnight. 

Just remember that buttermilk can freeze up to two to three months.

Celebrating the 4th of July, as usual, Nathan’s Famous July Fourth International Eating Contest took place in Coney Island where crowds of onlookers assembled at the corner of Surf and Stillwell avenues to watch hot dogs being shoved down between many contestnats within a ten-minute period. 

America’s defending champion Joey Chestnut won the Nathan’s Famous July Fourth International Eating Contest, third year in a row, by eating 68 hot dogs and buns in 10 minutes, 3 1/2 more than Takeru Kobayashi of Japan, his arch-rival.  By consuming all 68 dogs, Chestnut has broken the world record.

When asked why he entered the contest again Chestnut replied,

“I love to eat, I love the competition. It’s the Fourth of July, and you can get away with it on this day, push your body this hard, for something silly like this.”

Takeru Kobayashi came in second with a still-nauseatingly-high 64 and a half hot dogs. In third place was Patrick Bertoletti, who ate a mere 55 hot dogs.  Sonya Thomas, set a new women’s world record by chowing down 41 hot dogs.  Talk about “I am Woman, Hear Me Roar!”

Baking soda and baking powder are both chemical leaveners used to make baked goods such as cakes and muffins. 

Baking Powder is a mixture of baking soda and an acid, in powdered form, and cornstarch.  There are three general types of baking powder: fast-acting, slow-acting and double-acting, which is most commonly used.

“Fast-acting” baking powder uses only an acid that reacts immediately, while slow-acting contains only the acid that reacts under heat.

“Double-acting” means it begins to rise when wet and rises again when it is exposed to heat.

Baking Soda is rather known as Sodium bicarbonate or sodium hydrogen carbonate.  This is typically called for when a recipe contains an acid, such as buttermilk or yogurt. When the soda and the acid are combined, it will begin to rise immediately.  

In replace of baking powder, baking soda can be added to an equal amount of cornstarch and twice as much cream of tartar.  An example of this is if a recipe calls for 1 teaspoon of baking powder, it can be replaced by ¼ teaspoon of baking soda, ¼ teaspoon of cornstarch and ½ teaspoon of cream of tartar.

Do You Listen to Music While Cooking?

Some may say that cooking is an outlet for them, a chance to just be by ones self and attain some peace and tranquility.

Sometimes one may feel the need to slip in their favorite CD and jam while chopping and sautéing.  When I am in my kitchen I love listening to music especially oldies R and B.  I don’t know what it is about hearing Marvin Gaye or The Ojays while chopping vegetables just really relaxes me.

I have a love for music, all kinds so it honestly does not really matter what I am playing or what the radio station is playing.  If it has a great beat and I can jam then I’m good to go!

What gets you in the  mood to cook, music, the radio, or peaceful silence?
