Have you ever heard of the saying “everything but the kitchen sink?”  That saying is used when you add so many ingredients to a dish but the only thing you excluded was literally the kitchen sink.  In frittata’s you can add so many different ingredients, practically any vegetables or meats work beautifully in them.

For some of you, frittata might sound too fancy a word to say or even try to make, but the truth is that frittata’s are so easy and simple to make and they an be made for breakfast, lunch or dinner.  If your ever in a bind and have no idea what to make for dinner, trust me frittata’s will save you.

and then there was 5…

“Dad, how much do babies sleep, because Jacob sleeps a lot…”  This is what our first born asked my husband just yesterday.  My husband replied they sleep a lot because that’s how they grow, and also remember your brother came 5 weeks early too.  So all the sleep he is doing he would be doing inside your mom’s tummy if he was still there, like he was suppose to be.

Do you guys remember me telling you all that I was feeling ready for Jacob to come.  I mean I was 35 weeks and I was prepared for him to come two weeks early because that’s how early Julian and Kayla came.  what I was not prepared for was for Jacob to make his appearance 5 weeks early.

At 1:15am on January 19th I was awoken from my bed with my water breaking.  I mean I actually heard it POP!  It was crazy, because I know what it felt like when you water breaks, due it breaking with my daughter but that was 8 years ago, so I was a little rusty.  I rolled my husband over and said, “Uhhh I think my water just broke.”  Next thing I know we are waking the kids up getting ready and driving to the hospital at 3:30am.

Brrrr….. Is all I can say right now!

You see I live in Florida and technically we are not supposed to be cold to the point that its 30 degrees outside, it’s just not normal.  Last week we had a day that fell into the 20’s… can you believe that? the 20’s… I thought I was in the twilight zone, because two days after that it went all the way up to the 80’s.

Monkey Bread made individually makes life so easy sometimes.  I mean we all have at one time tried and eaten the re-known delicious sweet and sticky treat.  To have the ability to make everyone their own, you see when it comes to desserts, or anything sweet we don’t like to share… LOL!

These babies use so little ingredients and are so kid-friendly to make.  30 minutes and you will have mini cinnamon sugary monkey breads for all to enjoy!

Baked Chicken Tenders

Being at home with kids for any duration of time I always try and think of different things we can make for lunch time.  I mean you can only have sandwiches so many times a day during the week.  Coming off of holiday break I made these delicious Baked Chicken Tenders that were coated in Panko.  Yes… Panko… YUM!

These tenders are so simple and easy and they take no time at all to bake.  Plus, you can make them ahead of time and freeze them before the baking process or eat them right out the oven when you do bake them.  Last but not least they are healthier for you too, see there baked not fried.

Serve them with your favorite dipping sauce… you can never go wrong with barbecue, ketchup or some raw honey.

Let’s just say that after I made them they were gobbled up in 5 minutes FLAT!

I think that might be a new record for us Kennedys! HAH!

I think my family and I have a sweet tooth.  I mean we love food and all but when it comes to desserts we by far have a BIG sweet tooth.

After every meal I’m asked “What’s for dessert?”

We love cookies… chocolate chip cookies of course, especially when there soft and chewy and right out of the oven.

I saw this recipe that included not only soft chocolate chip cookies but a creamy cheesecake filling that was sandwiched between the cookie layers.  All you do is press half of the cookie dough into the bottom of the pan, then pour the cheesecake mixture over the top and then the remaining cookie dough is shaped into discs and placed over the cheesecake.

When the cookie bars are baked they rise and spread and become a delicious mixture of cookies and cheesecake.

Chill them and then serve….

Let’s just say Delicious!

Happy New Year 2014

Holidays are done and 2014 is here.  I hope you all had a wonderful Christmas and a fabulous New Year!  I am so excited for 2014 this year especially with the soon to be arrival of our third little one Jacob.  I know that 2014 will be a year filled with many blessings, health, and prosperity.

Can you believe Christmas is in just two days… Crazy right! I mean I feel like the year had just began and now its over. With Thanksgiving being so close to Christmas I feel like the holidays have been one after the other. To top it off life itself, has been crazy lately. I mean with the kids schedule and me and this pregnancy I feel like I have had no time to do anything anymore. I like to tell people my body has been taken over by the body snatchers. But, we in the ending stretch and coming down the wire, so I am pretty excited.

This year we decided to stay home for the holidays and that means just trying to plan dinners and getting of the gifts for the kiddies and family. One of my favorite places to shop is Target of course, that’s why whenever there is a way to save some money I’ll take it. I’m always looking for easy recipes I can make for a crowd and this holiday I wanted to make a baked artichoke dip… So yummy!

Look how easy it is…

Mix all the ingredients together except the artichoke hearts.

Chop up the artichoke hearts and then add to mixture.

Mix it all together and spread into a greased dish and bake at 350 degrees for 25 minutes until cheese is bubbly and browned.

Serve warm and with pita chips.

Sour Cream Pancakes

Pancakes are such a staple in my house, I think I make them at least once every two weeks, sometimes once a week.  At least I make some version of pancakes… I means I sometimes make Chocolate Chip Pancakes, Cinnamon PancakesChocolate Pancakes, Buttermilk Pancakes or even Biscoff Panckes.  Really I think I can make pancakes with anything. 🙂

I used to be so afraid of baking or cooking with sour cream, I don’t know I guess i just thought that whenever you cooked with it your food would just taste like sour cream and because I am not a huge sour cream lover I would always try and stay away from it.  Well not this time.  I had always wanted to try making Sour Cream Pancakes.

I had seen a few different recipes circulating the web and my eyes caught Alice, from Savory Sweet Life’s, recipe on PBS Kitchen Explorers.

These pancakes were fluffy and had such a great taste.  I only recommend eating them right after they’ve been cooked.  They don’t taste the same after.  A definite yummy breakfast recipe to have in my repertoire!

Deep Dark Brownies

Before I was pregnant I always had a craving for sweets.  But not candy, sweets… Dessert sweets!  I have always had a sweet spot for chocolate brownies, actually I have always had a sweet spot for any dessert that is chocolate.  Now since I have been pregnant I haven’t really had a sweet tooth for anything which is really strange.  I keep waiting for the cravings to come but they haven’t yet.

Until one day I wanted brownies.  but not just any kind of brownies I wanted an over the top deep chocolate brownie.  I remembered Lori from RecipeGirl sharing a recipe for deep dark brownies and I knew I needed to make it.

These brownies were soft and fudgy but had a deep dark chocolate flavor that just hit the spot.  The perfect ending for a chocolate craving!
