I am always looking for a recipe that will make large quantities sometimes– especially when I bake.  I feel that when I bake something I need to make sure to have enough for not just my own greedy family but also for my co-workers (which are like family), my sister (the one who lives down the street from me), and friends.

If you think about it that’s quite a tribe right there!  Of course the majority of the time they ALL are always asking me to bake something…anything.  They don’t care as long as its sweet, delicious and satisfying.

These Chocolate Chip Cream Cheese Cookie Bars make lots and lots of cookie bars.  I know what you’re thinking cream cheese… eehhhhhhh.  But seriously you don’t even taste it, but adding it to the batter gives it this soft and chewiness thats quite delicious.

I mean just try it for yourself… you’ll be so happy that you did!

Enough with the jabbering, let’s get to how I made these now…

With your mixer, cream together the butter, softened cream cheese, brown sugar and granulated sugar for 1-2 mintues.

Add eggs and vanilla and continue mixing for 3 minutes or until mixture is very light and fluffy. Make sure to scrape sides down halfway through mixing… I always forget to do this.

Doesn’t that look creamy?  DON’T EAT IT…. just saying!

 

Add flour, corn starch, baking soda, and salt and mix until well combined. Add chocolate chips and mix or stir until combined.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

I also added M&Ms but you can add really whatever your little heart desires (nuts, dried fruit, white chocolate chips, etc.)

 

Spread the cookie batter into a greased cookie sheet.  Bake at 350℉ for 15 minutes, just until they are lightly browned.  You want the cookies to be chewy and soft.

 

Cut them up in squares, bars, or make cookie sandwiches with them.  They freeze great, perfect in milkshakes and as a sweet treat for those you love.
