So I think we all know how to “roast” potatoes for this easy recipe for parmesan roasted potatoes.  You can pretty much add anything you want to add to potatoes and all you have to do after that is roast them.

 

Parmesan Roasted Potatoes

This recipe is so easy all you gotta do after you decide to make this yummy side dish is decide on what meat to pair with it… I made some real yummy lamb chops. 😉

Ingredients  

The ingredients needed are: new potatoes (I used red potatoes), parmesan cheese, thyme, kosher salt, black pepper, and olive oil.

 

Wash and chop up potatoes in half or smaller, all depends on how you like them.

 

 

In a medium bowl, combine all the ingredients.

 

Transfer to a roasting pan or 9-by-13-inch baking dish.  Roast, stirring once, until golden brown and crisp, about 50 minutes.

Serve hot or at room temperature.

Parmesan Roasted Potatoes
    
 *  1 1/2 pounds new potatoes, unpeeled, cut into 1-inch chunks
 * 3 tablespoons olive oil
 * 1 1/2 teaspoons kosher salt
 * 1/4 teaspoon black pepper
 * 1 1/2 cup of  grated Parmesan
 * 8 sprigs fresh thyme

Heat oven to 400° F. In a medium bowl, combine all the ingredients. Transfer to a roasting pan or 9-by-13-inch baking dish.  Roast, stirring once, until golden brown and crisp, about 50 minutes. Serve hot or at room temperature.
