This is a perfect simple dish that can be made any time of the day. I don’t know about you but I am always looking for new ways to incorporate veggies into my dishes especially for my kids. This is one that was definitely a pleaser all the way around. For a great way to incorporate broccoli into your weekly meals, this dish provides not only juicy succulent chicken but also fresh vibrant cuts of broccoli that lightens up any main course. All that is needed left is steamed white rice or even brown rice would be great.
The best part its healthy for you as well, especially if your like me and have been on a Ten in 10 week Healthy Challenge.
Enjoy!
Gather your ingredients: Broccoli, Chicken Breasts, Oyster Sauce, Dark Soy Sauce, COrn Starch, Garlic, Onions, Salt, and Black Pepper.
Rinse and pat dry the chicken breasts. Then chop the chicken breasts into bite-sized chunks.
In a large bowl, combine chicken, oyster sauce and dark soy sauce. Set aside for 15 minutes.
Heat oil in a wok or large heavy skillet over medium heat. Saute garlic and onions, cut into rings, until soft and translucent.
Increase heat to high. Add chicken and marinade, then stir-fry until light golden brown, about 10 minutes.
Stir in water, pepper and sugar. Add broccoli, and cook stirring until soft, about 10 minutes. Pour in the cornstarch mixture, and cook until sauce is thickened, about 5 minutes.
