It’s a three day weekend and in this house that is HUGE!
I know school only started two weeks ago but still a long weekend is exactly what this doctor ordered…
I mean if I was a doctor I would order it…

You know what I mean! and for this long weekend I have the perfect easy breakfast recipe for you… Egg-in-the-hole!
Have you ever had egg-in-the-hole?
It’s pretty much a fried egg cooked in the center of toasted bread all made in a skillet. A one-pan dish that can be made in just a few minutes. I don’t think anything can really beat that on a long weekend when all you pretty much wanna do is lay around the house in your pj’s.
Me, you’ll find me this weekend on my couch snuggled up with my little man definitely eating egg-in-the-holes.

Use a circular cookie cutter or whatever you can find, in my case the closest thing I could find was the cap off my cooking spray… sometimes you just gotta improvise. 🙂
Melt the butter place the toast in the pan, crack the egg in the center and allow it to cook for a 45 seconds.
Sprinkle salt and black pepper and cook for another minute or two…
Flip the toast and cook the other side… Doesn’t that just look puurrttyyyyy!
