So, for the Academy awards I made these delicious Nachos to eat and enjoy. I made the nachos by adding chicken, black beans, and corn. I tossed it along with homemade salsa and taco seasoning. I also added homemade pico de gallo for it, Fantastic!
They were so Yummy!
Start off with 4 chicken breasts. Cut the chicken in small bite-size pieces. Season with seasoned salt and black pepper.
Brown the chicken pieces until they are cooked inside and out. After cooking set aside.
While the chicken is browning, get a can of black beans, yellow corn, 2 ripe plum tomatoes, green pepper, small onion, and a packet of taco seasoning.
In a medium pan, on low medium/low heat, add the can of black beans, yellow corn, diced tomatoes, diced onions.
Add the taco seasoning exactly like the packet says on the back. Simmer all the ingredients on low heat for 8 minutes.
In a heat proof plate, layer the nacho chips, then the black bean and corn mixture, and the chicken.
Then add the shredded mexican cheese and sharp cheddar cheese, and chopped scallion. Place the nachos in a 350 degree oven and cook until the cheese melts.

1 packet of taco seasoning
2 tomatoes (diced)
1 green pepper (diced)
1 small onion (diced)

1/2 cup of mexican cheese (shredded)
1/2 sharp cheddar cheese (shredded)
