Good Morning (in a soft low voice)…
(Clears throat) Ahem… I said GOOD MORNING!!!!
Ok, That’s much better. It’s Monday Morning and I am fired up and ready to tackle my week ahead. Last week was kinda overwhelming for me, see I wasn’t feeling well at all, I think I caught one of the nasties my son brought home from school… of course. So you know when your subjected to carrying the kiddies off to all of their after-school activities when not feeling 100% its never a good thing. Compounded with my own activities, a big catering I had to get ready for, getting my house in order helping out with the kids PTA, and oh yea trying to remember to breathe, a minor detail I seem to forget at times. whew! I’m outta breathe just remembering the past week.
But never mind me complaining, tis a new day with bright things ahead. Like right now I have something that will just completely brighten up your day… S’more Granola Bars. I know, can you believe it… Marshmallows, Chocolate Chips, and Graham Crackers all mixed together to form delicious, gooey, sweet and fabulous granola bars… pretty cool!
Well I like to kinda jump start your week off right and I couldn’t think of a better way to do it then introducing you to these babies—stop drooling, no really stop your screen is soaked right now! 🙂

S’more Granola Bars
(adapted from The King Arthur Flour Baker’s Companion)
Ingredients
Directions
In a medium-sized saucepan set over medium heat, melt and stir together the butter, sugar, and syrup…
cooking until the sugar has dissolved.
Stir in oats, flour, salt, and graham cracker crumbs.
See how it comes together nicely.
1. Press slightly more than half of the mixture into a lightly greased 9 x 9 inch pan. Let cool completely. Preheat the oven to 350F.
2. Sprinkle the chocolate chips evenly over the top.
3. Then add the marshmallows.
4. Top with remaining crust mixture.
Bake the bars for 15 to 20 minutes. Remove from the oven and let them rest for 20 minutes, then cut into squares or bars while still slightly warm.
